What's the best way to fight an Enderman? I need to know.

The easiest thing to do is buy your pearls from the mall... lol. But to take them on yourself, build  a small platform 2 blocks up so you can stand under it. It should be minimum 2x2. Stand under the platform and look at the enderman. It'll agro against you, but not reach you because they're too tall. Then just hack away at its knees.

It's not for the pearls. It's for the fact i don't accidentally look in their eyes while i'm busy building.

Have a really sharp sword/axe. That should work 😝

I second ebi's suggestion. Have a little 2 block high bolt hole nearby incase of accidentally looking at an enderman. If you're building at height you'd have to be very unlucky to catch the eye of one so I wouldn't worry about it too much.

If you don't have time to build the 2-high thing, jump in the water. Enderman can't go there ^^

Similar to what Sirocca said:

When I do projects in the end, I always carry a bucket of water on my hotbar. That way, when I accidentally look an enderman in the eyes, I can just put the bucket down, and I can safely fight it. Quicker than building a small roof over your head.

Marbou9, I've been playing Minecraft for years and it's never occured to me to do that. I've occasionally jumped in a nearby puddle to escape irate endermen but never carried a bucket with me for that purpose.

I suppose you could always wear a pumpkin but then you can't see what you're doing, so not ideal, but super safe.

When I'm travelling in the end or fighting the dragon, I usally have a pumpkin on my head.  I don't like the enderman at all
It feels like the viewing distance of the enderman to get aggro on you is quite short on this server though, I haven't been in trouble at all so far. 

The water bucket, as mentioned above, can also be a lifesafer.  Not only for the enderman, but also to negate fall damage, obsidianise lava, ...

The easiest way to build safely imo is to have the proper gear on you:
- diamond boots with feather falling IV and (some sort of) protection IV
- diamond leggings with (some sort of) protection IV
- elytra and rockets to fly away and prevent fall damage
- diamond helmet with (some sort of) protection IV
- diamond sword with sharpness V
- bow with infinity and power V and 1 renamed arrow
