Lately I've run out of inspiration, having already built a mob farm, an animal farm, crop farms and a bunch of other things. So what should I build? (Not too big or too small, please.) I'm ok at redstone and decent at building, and kinda bad (but still looks good enough) at terraforming. I'm thinking of something in the mountains that stretch out pretty high above my town, maybe a mountain house Grian style?

You could gussy up the observatory, give it a more formal deck or make a lodge up in the mountains.

Well recently i got bored and made an underwater base (pain in the neck to do)  so if you really want you can try that
(i was inspired when i remembered one of rendogs suuuuper old vids (like reallly old) where he gave a server tour and one guy made an underwater base)

One thing I recommend is build a wall! then slowly fill everything in that wall with epicness

you could build a Roman style senate house (all out of quartz). I always try to build one of these in my survival worlds. It really stands out against all the wood/stone.
