Share some of your favourite foods/recipes

 I love cooking and I love learning new recipes so I thought I'd share some of mine and I'd love it if you'd share some of yours.

Ok, first one. 

Quick and Easy Baked Bean Bolognese

750g Mince - I use Tesco Everyday Value beef and pork mince
1 beef stock cube - I prefer Aldi's Quixo cubes
1/2 tsp instant coffee granules
1-2 tsp Schwartz garlic italian herbs
200g tomato puree
500g passata
1 tin (420g approx) baked beans

Put the mince in a saucepan with the garlic italian herbs and heat on high until fully cooked.

While the mince is cooking dissolve the stock cube and coffee granules in a small amount of boiling water and add to the mince.

Once the mince is fully cooked add the other ingredients and simmer for approx 10 minutes or until piping hot throughout.

Serve. 

Leftovers can be stored in the fridge for a few days or frozen for up to 2 months.  If reheating ensure that it is red hot all the way through before serving.  This is one of my favourites and I love using leftovers in toasties with cheese.  If you've never tried bolognese and cheese toasties I highly recommend you do.

Microwave chocolate chip cookies
Do you want chocolate chip cookies, but don't want to make a whole batch? Well here's the recipe for you!
Simple mix together:
1Tbsp melted butter (make sure it's cool before mixing in other ingredients)
1 Egg yolk
1 Tbsp white graulated sugar
1 Tbsp brown sugar
1/8 Tsp Pure vanilla extract
whip these together until the mixture is smooth.
Next add:
1/4 Cup white flour
1/8 Tsp salt
2 (or more)  Tbsp Chocolate chips
Mix well, you would do best to mix this in a microwave safe flatbottomed dish.
Microwave for 1 min and 10 seconds (give or take)

    Macaroni Cheese.
    Veggy, but not vegan. Not healthy.

    Macaroni:
    • Boil up some macaroni. I dunno, follow the instructions that came with it.

    Cheese sauce:
    • Get some flour. Couple of them big eating spoons full.
    • Get some butter. Probably one of that same spoon you used for the flour.
    • You need a clean sauce pan, and a smooshing tool. Warm the pan up over a hob.
    • Warm? Good. It's got to melt this butter into the flour. Thrown them into the pan.
    • Right, your goal here is yellow paste. Smoosh the butter into the flour with the smoosher.
    • Now milk. How much? Not sure. I use some milk. Probably enough for a couple of bowls of breakfast cereal. Enough to drown that macaroni you're boiling.
    • Find a whisk. You're not whisking, but you still need it.
    • Put a splash of the milk into the yellow paste. Not much. You want to kind of make it vanish into the paste.
    • Stir that milk into the paste with the whisk. Your goal is to break up the paste, and have it and the milk become one. Keep it on the heat, gently warming. Not too hot.
    • More milk. Stir stir. You have to keep it moving. You do not want lumps, and it's trying to make lumps. Don't let it boil. Stir.
    • Splash more milk. Stir stir. No boilage.
    • Keep doing this. You're now making white sauce, and you can remember this for other foodage that needs it. If it tries to lump up, lift it off the heat and stir it more.
    • Eventually, all the milk's in there. It's pretty warm, shouldn't be lumpy, and should be thick like custard (only not custardy). If you taste it, it should taste of boredom.
    • You're still stirring, right? Lumps will creep up on you if you drop your guard. Don't let it boil.
    • All the milk in? Good. Now you want to throw in some mustard. Not that American bright yellow stuff, no, that's just yellow ketchup for hot dogs. English mustard. Strong like a punch in the face. You need a teaspoon of it. Stir it in with that whisk.
    • OK, let's turn this white sauce into cheese sauce. You can use grated cheese or cubed cheese. Avoid mozzarella, use something cheddary. You don't need much - quarter to half as much as you used milk, or less.
    • Guess what we're doing? Yep, adding a little bit, stirring till it's gone. Take it easy, this is like adding ice cubes to a hot drink. Let each bit of cheese melt away, and stir it in, before adding more.
    • All the cheese is in? Good, It should be a smooth sauce, all cheesy like. Take it off the heat.
    • Your macaroni is hopefully done now. Drain it in a colander.
    • Now we introduce the macaroni to the cheese sauce. If you're hungry, just mix it up in the pan you boiled the macaroni in (because it might all fit) and eat it.
    • If you can wait, put it in an over baking pot, and bake it in the oven or grill until the top gets crispy. Some people slice tomatoes onto the top, but I think that ruins it.
    • Serve. eat.

Hot wing snack mix.

3 cups Rice Chex cereal
3 cups Corn Chex cereal
2 cups Cheerios
2 cups Honey Nut Cheerios
2 cups Chicken n Biscuit crackers.
2 to 3 cups of nuts. I use a mix of walnuts and honey roasted peanuts.

1 stick of butter
4 Tbs of Franks Wing Sauce.
3 tsp season salt
1 1/2 tsp garlic powder
1 tsp onion powder

Set your over at 250

Put all your cereals, crackers and nuts into a large baking pan.

Melt the butter and mix in the wing sauce.
Then add in spices and poor over the rest of the mix. 
Mix it well to coat all of the mixture.

Put it in the oven for 1 hour. Stir every 15 mins. If your mix is a bit wet you can go an extra 15 mins.

Let it cool and eat.

Named for the neighbor my grandma got it from:

Elsie’s Dish

1 lb ground beef
2 c celery (cut fine)
1 onion (cut fine)
2 cloves garlic
1/2 c raw rice
1 Tbs shortening or spray for skillet
1 can cream of mushroom soup
1 can cream of chicken soup
2 c water
1 tsp salt
1/2 tsp black pepper
2 tsp soy sauce
1 can chow mein noodles

Sauté onion, garlic, and meat until cooked through. Put all ingredients into a large casserole dish. Bake 1 hour at 350 Fahrenheit. Remove from oven and stir well. Sprinkle with noodles. Return to oven and bake for another 30 minutes.

Total bake time: 1 1/2 hrs. Easy to put together and toss in the oven ahead of mealtime.

Guess I'd share this one, even though its not exactly a recipe. Its something I learned recently. You can have baked potatoes in only 40 minutes.

What you need:
-Russet Potatoes
-cutting board
-large chopping knife
-paper towels
-microwave
-oven

How:
-Preheat oven to 400 degrees.
-Wash potatoes with water and dry with paper towels.
-Use the knife/board to cut the length of the potatoes, right down the middle. Do not cut all the way through, but cut at least 75% down toward the bottom.
-Microwave potatoes for 10 minutes, uncovered.
-Remove from microwave, oven should be preheated by then.
-Place potatoes directly on oven rack (upper or middle), bake for 30 minutes.

 Baked Taters in 40 minutes! :P Usually took an hour or more the old way, but the microwave speeds things up.

The BEST spinach artichoke dip of all time =D

You need:

One package of spinach.
16 oz can of artichokes
2/3 cups of Parmesan cheese
1/2 cup of sour cream
1/2 cup of mayonise
1 clove of garlic (I usually use about 4-5 though xD)

strain Spinich. Try and get as much water out as possible.
chop up garlic spinach and artichokes.

combine all ingredients and mix.

put into 8-8 pan and bake a 425-450 for about 25 minuets or until golden brown on top.

"Aztec" hot chocolate drink.

3 measuring cups water
Toss in approximately 3 dried chili peppers (whole with seeds) or 1 tbsp crushed red pepper flakes
1/4 or 1/8 stick of cinnamon--you can use powder but really you don't want to if you have a choice because it makes the drink gritty.
Dash of salt

Bring all to a boil and either sieve out peppers and cinnamon immediately or let it percolate for a while.

Add 50g (quarter measuring cup) of pure 100% unsweetened cocoa powder and immediately turn to LOW flame or it Will boil over. If you're using electric range it will probably boil over anyway; just remove from heat source.

1-2 tbsp vanilla extract (don't be cheap, use real vanilla extract not artificial)
1-2 tbsp good quality honey. Mix it all together. Makes "two servings" but in practice I drink it all myself.

 NOTE there is No Milk and No Sugar. Honey is plenty sweet enough and sugar is kind of bad for you. Also note, 50g of cocoa powder is a lot of fiber. Like 32% of daily nutritional value. This drink is a meal, and I've mostly just had this for breakfast and it holds me over until lunch. Sometimes I'll eat some protein (eggs) but between the honey and the cocoa it's actually a healthier breakfast than most "breakfast foods".

I have tried the recipe with two cups water and one cup milk, but didn't really care for it. I should point out that I'm not super into sweets and rather enjoy bitter drinks and 80%+ cocoa dark chocolate. (I even keep some bakers' chocolate in the car as my snack. A little goes a long way. )

Peanut Butter Balls

This is for when you crave something sweet, and only want a few at a time, since these are really rich.

11/2 cups of powdered sugar
1/2 cup of creamy peanut butter (I recommend the crunchy one =)
3 tablespoons of butter (or margarine), softened
1 pound of dipping chocolate

Directions:
-Stir together powdered sugar, peanut butter and butter until well mixed.
-Shape peanut butter mixture into 1 inch balls, placing them on a baking sheet covered with waxed paper.
-Let balls stand for 20 minutes until dry.
-Melt the dipping chocolate or confectioners' coating.
-Drop balls one at a time in melted chocolate.
-Using a fork, remove from the chocolate, letting excess chocolate drip off.
-Place back on the waxed paper.
-Let stand until dry.
 
This will usually make 15

There are alternatives to using peanut butter, like Oreos, but the recipe changes a bit more

I've noticed that I can't tolerate things made with powdered sugar/confectioner's sugar.  It hurts my tongue for some reason.  Larger grain sugars don't, but the fine stuff just doesn't do me any favors.  Fudge, donuts with powdered sugar coating, anything like that.  Tasty, but punishing.

Thank you so much for this. I've been microwaving potatoes for years but only piercing them, not cutting them. Tonight I had the best baked potato I've had in years using your method.

Salmon with Pistachio and Olive Paste and cherry tomatoes (2people):

* 50gr of pistachio nuts
* 100gr of green olives
* Olive Oil
* Cherry Tomatoes (300gr)
* Salmon (200gr per portion = 400gr)
* Salt and Pepper
* Some fresh thyme

To prepare:

* Preheat the oven at 180°C
* Use a blender to mix the Pistachio's with the olives and some olive oil. (Cut the olives before putting them in the blender, that works better. The more oil you add the more liquid the past will be. For a good consistency use max up to 3 spoons).
* Cut the salmon into slices of about 1cm thick. Place them in an oven-proof dish a little bit apart. Fill the gaps with the past we just made.
* In another oven-proof dish, place the cherry tomatoes. Season with a bit of salt and some pepper. Add a bit of olive oil on top.
* Place both dishes in the oven for 15-20min.
* Once out of the oven, place some of the fresh thyme on top of the salmon. Place the dishes on the table and serve directly to the plate at the table. (This gives makes it so the dish loses the least heat.)
